To be honest, it's difficult to really describe in detail how the day of the Main Street Food Truck Festival went, or what it was really like. I could go into detail about how our day started at 7:30 AM and didn't stop until 6:00 PM, but, I'll spare you my horrible story telling and writing skills for another day.

The Main Street Food Truck Festival was absolutely incredible! The amount of people we saw and served was ridiculous! Which leads me to say, the four of us working had never worked an event quite like this so you can imagine how amazed we were by the crowd. So, how do you do it? Good question.

Try figuring out how to stock a truck full of supplies in a cooking/serving area about the size of your walk in closet then turn around and serve a crowd of 25,000 people, or more (we didn't actually serve 25,000 people, but you get the picture). On top of stocking the truck, we had to have enough room to cook, prep, serve, and clean. It's not a pretty sight moving through a crowded truck with three other people, trust me.

So to answer your question "how do you do it?" Well, you just go with the flow and hope it all turns out okay, that's the honest truth. If you run out, you run out. We ran out of cilantro (10 bundles, a weeks worth at the shop) the first hour, then bread (20 loaves, two weeks worth at the shop) the second hour. It was insane. At one point we were serving folks out of every (4) window the truck had just to keep up with the amount of people in our line. Truly insane!

So you're probably thinking to yourself that we were overwhelmed, stressed out of our minds, and barely made it through. Truthfully, it was quite the opposite! We all loved it and were able to make it through the rest of the event without running out of anything important, like our dumplings!


Personally, my favorite part about the whole event were the people. The people you meet/serve are some of the friendliest people we've met, and that's saying something because we meet a lot of awesome people! The feedback that we were getting, and still get, is what makes it all worth it! We love serving people on a daily basis and it's refreshing to hear so many great things! So thank you!

The Main Street Food Truck Festival was definitely a one of a kind experience and we were so happy to be a part of it! We look forward to doing it again next year!
